Customization of callouts

Hello,
I thought I remembered that you could specifically have the application call out things like restaurants, financial institutions, and government buildings And be able to set each one of those individually on the surrounding settings menu. It seems now that there's just a master category level and not that fine tuned refinement that was available in the past. Is that located somewhere else where you can Really focus in on specific types of buildings to be called out as opposed to just the five or six major categories that is currently under surrounding settings?
