Ok so I am lazy and dont want to reconfigure all my music tracks I have in my sounds folder to an external application in order to hear them, I just want to do what I always used to do and say 'Quiet' when I want a tune to stop playing. This is how I used to have it set up but I have recently done a fresh install and dont have my old VA profile.
How do I get VA to stop playing a sound that hasn't completed yet?

You can use another sound file, either one that is a short confirmation, like a beep or something, or just silence. Mark the checkbox that tells it to complete all other sounds playing.

What I Would have done is setup playlists and then use voice attack to operate as media controls

Hi, there.  Usually what I do is just do a, 'stop all commands' to stop all playing sounds.  There is no feature in VA to allow you to stop a particular sound, other than what the others have said about playing another sound that interrupts a currently-playing sound.

I looked at adding an action way back in the beginning to cancel a particular sound... You would have to have an action to cancel each and every sound, though (pain)... I would entertain the idea of making a cover action that cancels all sound only (and not stop already-running commands)...  that may be something worthwhile.
