I'd like to be able to make the rows about 3x as thick at least and then I'd scroll right to see the rest of the days.

It's not that great if you can't read or recognize what you have scheduled.

The 'Expand' view option ensures day cells are large enough to fit their contents.

You can also increase the font scale in Settings to make the cells larger.
