BOTTLING!!!!

Hey guys,

What does everyone think about bottling on April 20th?!?  This would be the SvB, Rose, grenche and a little zin, if we can get that all in.  I have a few friend who may want to pitch in, for the right to buy a little wine.  we did make extra.

What does everyone think?

Pete, can we get bottles by then?

the 20th works for me.

what exactly do you mean by buying a little wine? 

i remember last season, working my ass off to save the cab and then having 18 gal turn into 3 cases. 

we have extra svb, but i may have ruined 20 gal by adding oak.

The 20th won't work too well for me.  I'll be flying back into town on the 20th, and we don't land until the evening.

uhhhh we had 18 cases. but that would mean we had 43 gallons of cab. seems like a lot. but that is what 18 cases work out. sorry for the bad math earlier. 
anyway, if some others can come, we can do it even if will is absent. he can make it up at the next bottling.

i would prefer to put zin and grenache in green bordeaux bottles. and clear for the SvB.

here are my thoughts on the up coming bottling re: the zin:

1st.  transfer the zin in steel to the barrel so that it can get some barrel time. 
2nd. transfer some barrel zin to the steel keg. bring that to bottle. 
3rd. also, that way the stuff in the steel keg will be sediment free for the ride across the bay.

in addition we are going to have to top up the ps after bottling. we could do it with grenache. but, what would be best, in your opinion?

I agree about the zin!

I think we should plan to empty the PS.  Distribute between Zins and Grenache.  Let try to bottle it all.

Did you get enough infor for a bottle order?

I think we need to store the bottles with you until we use them.  We should use most next week end.

i would rather let the ps rest on oak until the next crush. bottling then makes more sense as regards barrel health and letting the ps age a bit longer. i also think we should do the same with the rhone and zin in barrels. why rush into bottling? we have the capability to age our wine now with the new barrels. we should use them for aging. also, the barrels will not get nasty if we keep wine in them. again, i think we should bottle what is in glass and steel now and let our barrels do some aging for us to make some really great wine!

17 cases of clear burgundy for roses
 
19 cases of clear bordeaux for SvB
 
37 cases of green bordeaux for the zin
 
54 cases green burgundy for the rest

i prefer the composite corks with whole cork ends

i may be confused.
from a previous email and conversation i had thought that we would only be bottling the genache, savignon blanc,  and some zin from sf this weekend next. i thought that we would bottle zin, rhone, ps  and syrah blanc at a later date in sf closer to the crush in fall, in order to give the wine more time to mature on oak. note: this would give the barrels less time to sit around without wine in them. 
is this the plan or are we doing something else?

if this is the plan we will need:
4 case clear burgundy
19 case clear bordeaux
16 case green burgundy
8 case green bordeaux

looks like 560 corks

get 1000!

I think we should bottle more now.  Most of the wine will not gain anything from aging more.  It's only the zin and Rhone that will benefit.  We have the use some PS for the zin and Grenache.

the total number of cases is the lower email, from friday.

the upper email, from sunday, is my estimate for the first bottling.
