| here are my thoughts on the up coming bottling re: the zin: 1st. transfer the zin in steel to the barrel so that it can get some barrel time. 2nd. transfer some barrel zin to the steel keg. bring that to bottle. 3rd. also, that way the stuff in the steel keg will be sediment free for the ride across the bay. in addition we are going to have to top up the ps after bottling. we could do it with grenache. but, what would be best, in your opinion? dave |

| i would rather let the ps rest on oak until the next crush. bottling then makes more sense as regards barrel health and letting the ps age a bit longer. i also think we should do the same with the rhone and zin in barrels. why rush into bottling? we have the capability to age our wine now with the new barrels. we should use them for aging. also, the barrels will not get nasty if we keep wine in them. again, i think we should bottle what is in glass and steel now and let our barrels do some aging for us to make some really great wine! |
