when we pressed the cab the juice was a bit sweet. it is now in the big blue although i don't think the seal is perfect. i ran some tests. 
smell, it almost knocked me over! lots of co2 being produced.
taste, sweet but very delicious i had to drink all the wine from the specific gravity test.
specific gravity: started at 1.1067 after dilution to 25 brix. it is now at 1.008. which means it is close at about 1.21 % off target alcohol content. it will be ready to put in the barrel soon at which time i will top up with merlot. the rest of the merlot will stand by in carboys for later blending.

ran the cab into the oak barrel. it is fermenting and i expect it to be dry soon. lots of bubbles through the ferm lock. the big blue definitely doesn't seal. after fermentation slows down we will add some of the merlot to top up.
