hi guys,
just got back from vacation. i let the cab work while gone. i think it is finished now. it is still a bit sweet but the 10 gallons of merlot will moderate that a bit when blended. both taste great.
will sulfur the cab tomorrow.

i think it is sugar. but heck what do i know. i have already restarted the fermentation with champagne yeast. but it is too cold now. do you think if i put the electric blanket back on it would perk up again? i am willing to give it a try. stir up the lees and heat it up see what happens.
