unmapping - wtf?

I cannot understand how :unmap is supposed to work.
e.g.
:map <C-z> :undo<CR>
Now Ctrl+z reopens a closed tab
:unmap <C-z>
Really?
:map
Then I decide to try the (absurd) syntax in the help file
:map <C-z> :undo<CR>
Seriously, what is this?!!
