[vim/vim] GTK4: Improve dialog windows (PR #20448)

Currently the dialog windows for the GTK4 GUI do not support text fields, meaning inputdialog() does not work as it should. Refactor the dialog code to create a custom window instead of using GtkAlertDialog. This also makes it so that mnemonics work with the dialog (before it didn't).
