I have seen this question with earlier versions of Video DownloadHelper, but the remedies call for performing actions like, download without conversion, an action I cannot find with the current interface.

For example:

The resulting mp4 download plays just fine in VLC but is jerky in QuickTime (Version 10.4 (855)).

I just updated my conversion app to 1.2.4.

Please let me know what knob to turn to get a good video. (I'm sure it's Apple's fault.)

Thanks for a GREAT tool!  It has enabled me to keep copies for myself of various broadcasts made of the chorus I am in.

Other than using VLC instead of QuickTime, the other workaround for this issue is to convert the downloaded to pre-configured output format "Re-encoded MP4 (H264/AAC)" (or any other custom format where you force video re-encoding).

To request a download and convert action, pass the mouse over a detected video entry in the VDH panel, click the "..." sign that appears on the right, pick "Download & Convert".

To convert an already downloaded video, click the toolbar VDH icon to open the panel, pass the mouse over the "..." sign at the bottom left, pick the recycling icon with tooltip "Convert local video".

Thanks very much for the quick and detailed reply.
Re-encoding fixed the problem.

The problem I had with finding the encoding menu was two-fold:
1. I didn't get "Download and Convert" when I looked for that command because the menu completely changes when the detected video entry changes from downloadable to playable.  So I thought the function was gone.
2. I didn't think hard enough about what "Download and Convert" meant when I saw it, and needed to find that "Re-encoded MP4 (H264/AAC)" item.

Thank you for being patient with my confusion.
