Apricot Marzipan Muffins

  • 1 cup of smashed bananas!
  • 3 cups of flour (whole wheat is best)
  • 2 tablespoons cornstarch
  • 1.5 teaspoons baking powder
  • 1teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • .25 cups of your preferred sugar
  • 1.5 cups of unflavored almond milk
  • .25 cups of soybean oil
  • .5 cups of vegan marzipan chopped into pieces
  • .5 cups of chopped dried apricots
  • 1 teaspoon salt

Oil your pan and preheat your oven to 375 degrees.

Mix all the ingredients, except the marzipan and dried apricots, in a sturdy mixing boil with a whisk to prevent clumping.

With a spatula, carefully fold in the marzipan and dried apricots.

Deposit mixture into muffin pan.

Bake until it looks like a muffin.

About 25 minutes.

Don't touch them straight out of the oven! I know they will look delectable but be mindful of your heat tolerance!

In fact, give them a time-out for 5 minutes. At least.
