1 chopped onion
1 diced green bell pepper
2 minced cloves of garlic
3 cups/2 cans of cooked beans (your choice)
2 cans diced tomatoes
2 teaspoons chili powder
1 teaspoon cumin
1 1/2 cups of corn
1 1/2 cups diced zucchini
What you'll need to do:
In a non-stick pan over medium heat, sauté the onion, bell pepper and
garlic just until lightly browned, for about 3 minutes.
Next, add the beans, tomatoes, and seasonings.
Bring to a boil, then reduce heat, and simmer uncovered for about 10
minutes.
Stir in the corn and zucchini and continue to cook until the zucchini
is just tender, not mushy, about 7 minutes.
Add more seasoning if desired.
