Almond Milk, Anyone?

A lot of people drink soy milk instead of real milk, but I found the
best substitute just 6 months ago. If you've never tried almond milk,
please do. My favourite brand is Almond Breeze, and I can get it at
Trader Joe's and some Safeway stores. I get the vanilla-flavoured and
it's delicious. It's also very low in calories and fat. The taste is
creamy and almondy, and I never leave the store without picking a box
up. Oh yeah, it comes in a box. Just like some soy milk brands.

If you want to make your own, I found a recipe online, but haven't
tried it... not sure how to get my hands on orange blossom water,
though.

4 cups blanched almonds
4 cups water
3 cups sugar
1/4 cup orange blossom water or rose water

What you'll need to do:

1. Grind the almonds in blender.
2. Add the water and continue to grind the mixture.
3. Strain the liquid through a sieve lined with cheesecloth.
4. When drained, squeeze the remaining pulp to extract as much liquid
as possible. Discard the pulp.
5. Pour into a heavy saucepan, then stir in the sugar.
6. Boil, stirring constantly, then lower the heat and simmer very
gently for 5-10 minutes.
7. Turn off the heat, add the orange flower water, and let the syrup
cool.

Hi Goat,

I will definately give this a go. Infact I'll mention it to my brother
who drinks soya milk.
He is allergic to dairy products so this will be ideal for him.

You should presoak almonds in water overnight to get them fully
hydrated. Rose water, or orange blossom are just for flavor. In this
recipe I will substitute these flavors with 1 teaspoon of Vanilla
extract. To keep the same ratios in the recipe I will increase water
by a 1/4 cup.
Boiling should be optional.. You should be able to drink it as is
without cooking. Uncooked Almond milk in India is called Thandai.
Cooking is just gives you another different texture.
