Marius asked me to write up something for the wiki and I took a quick
look at it and it's missing a category index on the front page. One can
browse categories but that's not really a page.
Does anyone know offhand how to easily convert this:
http://www.vanagonwiki.net/wiki/Special:Categories
Into an editable page? That would be a good start.

What specifically isn't convenient about Special:Categories? I think it's
fairly straightforward. Also, once the categories grow, then MediaWiki
starts grouping the Categories by alphabetical groups, etc.
So help a brother out here. I used to be able to click "edit" on a page
and add a link to a new (not yet created) page, then click on that link
and use the editor to create the new page.
So, how do I create a page under, say, the "category "Westfalia"?
(I'm missing the Create New Page option, and a way to assign category,
maybe?)

I'm not seeing a "create page" button.

Perfect. We need a less-obvious way to do this. Someone might figure it
out.
The way to do it, as I understand it and did it, was to start by placing
a page link on a page, like the home page. Then when you click on it,
the wiki says the page doesn't exist and offers to let you create it.
This is a nice top-down way of going about it and felt fairly intuitive.
I'll create a link to a (non-existent) Index page, then create it using
the special categories listing, then link to those pages from the Index
page.

Take a look at the wiki's home page now and see if what I've done makes
sense.
