As @Heyitsrick mentioned, most content on Roku channels uses Dolby Digital+, which usually cannot be transmitted over optical. But DD+ is "real" 5.1. If your AVR doesn't have HDMI ports, it likely doesn't support DD+ either. And as mentioned very few TVs will convert DD+ to DD. Unfortunately, for the majority of online streaming today, you need an AVR with HDMI ports and DD+ support. Otherwise, 2 channel stereo is all you are going to get.

I had the same problem. I was able to get it sorta fixed by moving the Roku from the ARC HDMI input to another standard input. THis at least allowed my 5.1 plex rips to stream properly via an optical cord to the receiver.

I did discover along the way that the native apps in my new LG tv are better than Roku's. The LG even transcodes DD+ down to standard 5.1 DD via the optical cable for my old receiver which doesn't have HDMI or DD+ ability. Finally can watch netflix in full surround!

Do they have wifi? I have a chromecast which I love. You find things on your phone and then cast to the TV - youtube, netflix etc. It also has apps on it and a remote control to control it.
In order to work (and I think firesticks are similar) you need:
TV with HDMI port
Power near the TV to connect it to
Wifi - to connect the chromecast
Ask if they have smart TVs so you can log in on their TV with your accounts.

Different things which do similar - chromecast, roku, firestick

You can connect your iPad to your tv with a special dongle. You have to buy the Apple one or it doesn't work but that effectively puts your iPad screen onto your tv screen so you can steam Netflix that way.

You might want to check the wifi is good enough for that though. If it isn't, you could download a load of stuff I guess

When we go we take our play station which has netflix on it. It worked fine.
You need a hdmi cable to attach to the tv. This is the cable you connect your game console, sky box etc to her tv with.

I am playing .mkv movies with 1080 resolution and about 12gb size without problems and i think, that is a good alternative because, the Raspberry Pi has lower power consumption than a PC and with a wireless card, you can stream contents to your TV.

Raspberry need USB storage or SD card.
Controll Raspberry via smartphone app (Android / iPhone app) using WLAN (smartphone) and (W)LAN with your Raspberry Pi. Some tvs can send HDMI CEC commands and you just use your normal tv remote. (horrible for setup but nice afterwards)

They also have mobile apps that can can remote control XBMC as well. I have my setup with my old gaming rig hooked up to my TV via hdmi with XBMC installed, and then I control it with the xbmc remote with a xbmc android app from my phone only need the TV remote to turn on the TV.

My main computer, with a ton of storage, use a software SAN/NAS solution to host shares with my movies and contents. Hook up a raspberry pi to the television with a wireless usb device, install xbmc on the pi. Then I should technically be able to stream netflix and 1channel from the PI, along with obtaining movies and contents from my desktop with much more storage.
