Alaska Pollock is a dream fish for any chef or dinner part
planner.  Incredibly versatile, it can be broiled, fried,
steamed, poached, baked, or saut'ed.  It's healthy as can be,
packed with protein and low in fat and calories.  Careful
management of fishing by the state of Alaska has ensured that an
abundant supply of fresh and wild Alaska Pollock, guaranteeing the
availability of a superior value whitefish year round.  The
delicate flavor, excellent flake, and firm fillet texture allow for
such a variety of Pollock recipes that there's something to suit every
taste, no matter what style of cooking one prefers.
A simple Cuban style Alaska Pollock Asado is a sure-fire way to spice
up any sort of dinner fiesta.  First season your Alaska Pollock
fillets (up to 10 fillets) with salt and pepper.  Next combine
two tablespoons of olive oil, one tablespoon of cumin powder, a
quarter-cup of chopped garlic, and two teaspoons of dried
oregano.  Add a few chili flakes if you enjoy a bit of extra
heat.  Use this flavorful mixture to coat your fillets, and broil
them until they are opaque throughout.  You could accompany the
dish with your favorite salsa or a homemade jicama-orange slaw. 
The final result is an incredibly healthy and flavorful dish, but
there are certainly other Pollock recipes for those with something
else in mind.
For something a bit less health minded but equally packed full of
flavor and good cheer, what better than some beer-battered Alaska
Pollock fish and chips?  You can prep your chips by slicing some
Yukon Gold or Russet potatoes and placing them in a pot full of cool
water.  Bring the water to a boil, reduce the heat and let it
simmer for three or four minutes.  Set the potatoes aside and you
can start preparing your batter.  Mix together a cup of flour
with a cup of beer (any lager will do), and then add in two whipped
egg whites and a half-teaspoon of dried dill.  Dip your Alaska
Pollock fillets in the batter and make sure they are well coated
before frying them up in either a deep pan or fryer full of hot
vegetable oil.  You can throw in the chips along with the fish,
remove it all when it turns golden brown and is as crispy as you
like.  This could of course be accompanied by your favorite lager
or ale. 
Alaska Pollock recipes abound; after giving these ones a try then just
let your imagination run wild.  You are guaranteed an excellent
quality, high protein meal.
