Stupid question but I have to ask, when does a blue cheese go bad. I
have had some that looked rough with dark patches but tasted great and
I have had some that looked alright but tasted sour. What kind of
experiences has everyone had with this?

It seems the firmness a lot of times tells me if it is ok. Too soft or mashie and it is gone...
