I'm having trouble editing the symbology of the flow accumulation layer to symbolize the drainage properly. No matter what value I use for my break value of the two classes I still have a lot of gaps in my streams. Any suggestions?

Are the gaps there even when you zoom in on them? If so you might have errors - pits in your dem- use the fill tool on it. Or it's possible it's just your screen resolution and you need to zoom in more...
