We recently (September 2011) switched from WebTrends to Urchin and
I've noticed some drastic changes in some reports. For instance,
Urchin is showing between 10 and 15% of all traffic coming via Safari
browsers, while WebTrends always reported less than half a percent.
How can I explain the discrepancy?

What platform? Are any of those Safari users also on an iPhone or iPad?

It could be these are mobile users, and WebTrends just reports them differently.

It could also be growth in mobile.

Another thing to keep in mind is how you've configured things.  With Safari, this is particularly important because the Safari "home screen" loads tiles of the "favorite sites".  Each time the browser opens or a new tab is opened, all of these sites are shown with thumbnails - the thumbnails are, in fact, fully loaded and rendered versions of your site.  So, depending on how you've configured your WebTrends vs. Urchin, and how your Safari customers behave, you could see this spike due simply to the "favorite sites" effect.
