I understand you have a TS8250 and you are unable to print in "draft" mode. The TS8250 is connect to your computer using an AirPrint driver and while the AirPrint driver allows communication between the two devices, unfortunately "draft" mode is not an available option.
If it's not that critical to stick with the 'Airprint' driver which apparently has fewer features comparing with Canon's original driver, I encourage you to print wirelessly via the original one instead. Just download MG3600 series CUPS Printer Driver Ver. 16.40.1.0 (Mac) from their website and install on your Mac.
Choose the Canon printer which found through 'Canon IJ Network' instead of 'Bonjour Multifunction', at the 'Use' box, choose Canon's original driver instead of 'Secure Airprint'. Don't forget to change the 'Name' of the printer to indicate that this one is not using the Airprint.
I've tried a few different applications and all are the same. When I go to print, I get a window that includes a print quality slider at the bottom that includes three settings: draft, normal, and best. The word "draft" is grayed-out. If I try to drag the slider to it, it snaps back to normal in the middle.
I looked in the printer's manual, and it says draft mode can only be selected with "plain paper" selected. But, even when I have plain paper selected, I cannot choose draft quality. In fact, it seems no matter what I try I cannot choose draft quality.
Can anyone tell me how I can select draft print quality, and why I'm having so many problems doing so? Maybe it's to be expected that the Epson isn't letting me select the print mode quality that would save me the most ink.
Based on your screen captures I believe you may have selected Apple's AirPrint driver rather than the Epson driver. This can happen if you add the printer by selecting it from the small pop-up window that appears with a heading of Nearby Printers after you click the plus button in the Print & Scan preference pane.
To confirm which printer driver you are using, open the Print & Scan preference pane and select the Epson in the Printers colum. The right pane will give some details about the printer. If there is mention of AirPrint in the printer Name or Kind, then this will be the issue. The fix would be to remove this printer from Print & Scan and add again. But this time, don't select the Epson from the Nearby Printers pop-up. Instead, click on Add Printer Or Scanner from this pop-up window and from the next Default Add printer window, select the Epson in the list and ensure you select the Epson driver in the Use menu rather than the AirPrint driver.
This worked on my Epson 434. Thank you. I wish I'd looked before printing the 60 pages in color.... but it was the frustration of months of saying, "why can't I print in draft" that culminated in my having to replace the ink cartridge mid print that led me to your answer.
1) When selecting the Epson print driver, in addition to what Pahu said, note that you have have to (a) delete/re-select printer, but note that (b) before you click "ok", there's a dropdown menu on bottom of the pop-up window where you select "airport" or "Epson" etc. print driver to use with the selected printer.
I began setting this printer up last night at about 10:00 p.m. Five hours later, I was still trying to get it to work properly (there was an issue with the scanner). I kept uninstalling and reinstalling different things and trying different options. I guess AirPrint was the last one I had selected.
So now I've been fiddling around with this print quality issue for a couple of hours, and I'd just about had it with all of this. I'm glad you were able to solve it for me, because it would have bothered me all day tomorrow and into Monday (when Epson's tech support would next be available).
Thank you PAHU you deserve a medal!!! Would never had figured this out. You should be paid by epson because I was just about to return my xp-610 because of this. It wouldn't put it pas a printer company to disable draft printing in order to maximise ink profits! But that was not the case so thanks

I am trying to print with my HP PSC1410, and I was wondering what is normal for fast draft printing. I mostly print text in black and white and I am asking as I used the option to save on costs and time. Some text came out blurred, barely legible if legible, consistency of printing quality was lacking as well. I am unsure but the problem aggravates the more pages are printed.
I am asking because I was thinking my black ink cartridge was running low, but on on other options like Fast Normal at 600dpi and Fast Normal at 300dpi printing seemed fine.
So I am wondering whether it is a cartridge / printer issue or whether what I described above is normal for Fast Draft printing. Regretfully I did not keep the Fast Draft printed papers to post their pictures.

Thanks a lot for your reply. I installed the HP Toolbox as linked by your kind self. I have cleaned the cartridges and quality was good. I also printed a document in Fast Draft and I had no problems. I hope that this actually fixes my problem, as I only print when needed and as such problems would be identified further on.
So I have been troubleshooting the E1 paper size mismatch /wrong error while trying to print from windows. I have found that I can print in black and white and in color in draft quality mode. However in normal and quality mode I will get the paper jam half way through and the error for paper mismatch. What an odd and stupid thing to be happening when its not a physical issue. So if anyone has been able to get around this I'd love to hear how. I've tried all the uninstall and unplug for 60 seconds, and redo the paper sizes etc for that mismatch error, thats how I found that putting it in draft quality will allow me to pring in BW and Color.......Thanks in advance BW okay in draft mode but , no good for color mode which is why I got this printer. I updated to the latest firmware as well and it didn't help.

Thanks for trying to help. I followed the steps and the condition remains the same. I can print in draft mode only, color and black and white. When trying to change quality to normal or best it will not print and stops the paper with the error. While trying to use the software to print test pages or status results the paper comes all the way out blank and reports an error back to windows that it could not print it. Wifi or USB makes no difference in my testing. It also will not try to align the cartridges, I assume because they need to use normal mode and not draft mode.
Yes tried that as well and got the same results, always able to print in draft mode. I checked the firmware again and it is up to date as well. You have to assume the speed at which it prints in draft mode is why it works. But is it mechanical or driver that causes the issue with trying to print slower and better? It's not like its ever a real paper jam, you can always get it out by pushing the button or it pushes out on its own if left in error state. So doesn't seem like that part is mechanical.
