I recommend going with a cast iron sink because they are easier to keep clean and because stainless steel sinks can be loud. No selection has been made for lavatory sink. Any kind is fine with me but i recommend an under the counter sink. I think we have finally agreed on a dishwasher and washer/dryer.
I always specify insulated stainless steel sinks, which dramatically reduce the noise. What changes were made, and who authorized the changes? I need to be informed of any proposed changes before they are made.
The bathroom sink hasn't been specified, as we're still looking for the right solution.
