I just replaced the carpet in the salon with Brazilian Teak three quarter inchprefinished.  cost was $500.  did the work myself needed a nail gun took 2days.  hardest part was cuttingin the hatches 4  finishedproduct beautiful.

Ron,
How did that work?  Is the teak just planks laid side by side and nailed in the corners?  Where did you get the Brazilian Teak.  I have a lot of trouble getting teak now days.

Ron,
I used an engineered flooring for the galley forward. I ended up using a product called Mirage which was pretty expensive but had a bulletproof factory finish. 
I've decided on carpet for the salon due to the hatches and the fact that I am removing them quite often. They are so heavy for me to hoist I was afraid I would damage the flooring. 
Here is a picture of the flooring. As you can see I decided to rebuild the table out of the same material.

Hah! Thanks. I won't be one of those guys who says it was easy. There wasn't a straight cut anywhere and with the cut off saw on the back deck I must have made 1,000 trips from knees to saw and back. I'm betting the carpet job will be easier. 

But now its done I am pretty happy with the result.
