Is there a desk phone phone that will handle both voip calls and legacy
old-fashioned PSTN calls (both in and out) (and if I’m lucky CLID on
incoming), preferably with both an ethernet port and an old-fashioned BT
style RJ11 port.

We have a small home office / remote working situation, and will be
loosing the PSTN in the next couple of years, but need to transition
gently, and run both side by side for a little while for various reasons
(including being in contract to the PSTN provider for another 18 months
so we don’t want to break that quite yet).
(The facility to use a couple of different sip accounts, a headset and
speaker/hands-free would also be nice)

I've tried Grandstream but doesn't seem to be much there. I've seen a
suggestion that a Siemens Gigaset may do it (although it's cordless)

TIA

Couple of options.
The simplest is to get a Gigasey Go-Box 100 which can handle both a
network connection (RJ45 for VoIP) and a standard RJ11 for PSTN. The do
need to be set up but AFAIK do the job. The GoBox 100 is also a DECT
base station in its own right.
In terms of phones that can handle PSTN and VoIP, look see what Yealink,
Avaya, Polycom and Snom have to offer. Look at onedirect.co.uk - they
seem to have a fair range. Also look at Cisco and 3CX who do ATAs and
VoIP Gateways.

Gigaset certainly does do it, have been doing what you want with an N300
IP base station and a couple of cordless handsets for 5 years now,
couple of SIP lines and the PSTN.

Gigaset DX800A, also acts as DECT base for handset(s), might be
discontinued by now, but still exists on amazon/ebay

+1 for the Gigaset N300 - I got it when I was still on FTTC and
switched over to VOIP when I had FTTP installed.
