In the call, click the joystick. Go to Record. Hit enter. The file can
then be IrDA/Bluetooth/cable'd back to your PC as a .amr file. This can be
played back in the free Quicktime player from Apple.

Retell used to do a device called a Watson mic. It sat in your ear
and a hollow tube led to a mic which you would plug into a recorder
(it needed power from the socket to work the mic).
It recorded both sides of the conversation. And worked with
pretty much any phone of any sort.
Maplin used to sell it but it seems that Retell don't do that model
now. The probably do another one though.

Until you run out of memory on the telephone. I've recorded conversations
of around half an hour with no difficulty.
