Fruit Tree Pruning

I have just moved to a new property in Shropshire UK and have inherited
two gorgeous fruit trees. They are a plum tree and apple tree.
However, the previous owner has allowed these to become somewhat leggy.
They are in need of pruning but are presently full of blossom.
When is the best time to prune back these magnificent specimens and are
there any tips you can give me.
Many thanks from a newcomer to the gardening world.

By this, do you mean lots of thin, unbranching, vertical shoots, such as
those on my blossom tree, which I think is a Prunus?

If not, I'd also welcome advice on how & when to remove these.
