The shootout at the end of LA Confidential has nice use of discrete, rear
channels.
If you can get a hold of The Fifth Element, then the "ZF1" scene (called
something like "Empty Box/Crate" in the R2 version) has an excellent demo of
front channel steering. Listen to the bit where Zorg fires the arrows into
the dummy. In DD 5.1 you should clearly hear them shooting from the left
speaker to the centre speaker. In pro logic, there is just a general sense
of movement somewhere between the two speakers. Also, the net going over
the viewer's head should sound clearer.

My very favourite is the beginning of 'Zorro' when he swooshs
his sword in a 'Z'. The sound to that is awsome. Second best
is the storm sequences in 'Twister'
