I gave some of these to friends the other day and they raved about them.
Cranberry, chocolate, cashew, crunchy cornflake cookies
130g U/S butter
100g brown sugar
1 egg
1 tsp vanilla
40g chopped cashews (or other nuts such as almonds or macadamias)
100g dried cranberries
230g SR flour
100g white chocolate chips (or milk or dark chocolate)
100-150g crushed cornflakes
Oven: 180C/350F
Cream butter and sugar until light and fluffy (use hand-held electric mixer)
Beat in egg and vanilla
With a spoon or spatula, fold in nuts, choc chips and cranberries
Mix in flour
Take about 1.5 – 2 TBSP scoops of dough and roll into balls (about the
size of a golf ball) then roll around in the crushed cornflakes until
evenly coated.
Put on baking trays and lightly squash each ball with a cupped hand
resulting in oval-topped cookies reminiscent of amaretti (Italian almond
cookies).
Bake for about 15 minutes
Makes about 2 dozen cookies.
