I've not much experience with pastry, it sort of works most of the
time. I've been wondering about making some up and then leaving till
later.

How long can you keep it in the fridge before rolling out?

That depends. Have you mixed it with water? If so, then I wouldn't keep it
at all.

On the other hand, if you simply rub a pastry mix then you can keep that for
some time. Consider how long you would be willing to keep butter in the
fridge. You can keep pastry mix for a similar amount of time. In future you
could rub a batch of pastry mix without mixing any water. Keep it in the
fridge and only use as much as you need when you actually need it.

You can always make it up and freeze it in usable quantities. It's so
easy then to take out when you need it. Defrosts quickly too.

Right as usual, Enzo. The crumbs can be kept for a while and just
adding water takes no time at all. Also, you have nice, cold crumbs.

It actually rolls better after some time in the frifge, but if you aren't
going to get at it, stick it in the freezer and it will, if wrapped well, be
fine for weeks.
