Mail icon confusion on iPad

I've just transferred my mum to a new ipad 9th gen - from an ipad air first
gen - and I'm confused by the icons regarding deleting emails. The delete
icon seemingly randomly isn't always there. Sometimes it's a bin icon and
sometimes it's something else, archive maybe? I don't understand why it
changes. Her email server is google and accessed via Apple Mail.

Can anyone shed some light please?

It's due to Google not being a normal email service, and forcing the
default to "archive" not "delete" for most folders (not Junk or All Mail
though, they get the Delete bin). It's even worse when you have more
than one mail account and the icons switch around while you browse the
mixed inbox.

Doesn't look like there's a preference to configure, so you'll just have
to put up with it.

Thanks Alan for pointing out the tap-and-hold to get the other option!

I'll have to check whether there's email coming from another account to get
to the bottom of the switching icons.
