It looks like it; typing in 'Zapfino', all the glyphs look normal until
you complete the word, at which moment it turns into a triffid. So it
has to be the complete word that triggers it.
Like in the old days of Antler stickies, which when (and only when) you
typed in Antler!, including the exclamation mark, would show the outline
of an elk. Sadly, it doesn't work on the version I have now. But it used
to...

It's just a seven-character ligature. Most ligatures replace a two-glyph
string with a single glyph representing those two characters (ff being
quite a common one; less subtle but also less common these days is ae).
Zapfino is just showing off by replacing a seven-glyph string with a
single glyph.

Hoefler Text even has an `st' ligature[1]. Never managed to get it
using the MacOS X GUI; I can only get fancy typography out of it using
XeTeX.

[1] ae is uncommon, I think, due to the prevalence of crappy GUI WPs
and crappy founts - for most of the world using most WPs, ligatures have
to be inserted manually which means they just don't get used.
On top of that, given that some instances of the ae letter combination
in English shouldn't be turned into an ae ligature, you can't let the
software do that one automatically.

TextEdit will give you all the fancy ligatures and typography. Just
choose "rare ligatures" in the typography dropdown in the fonts palette.
