This might be explained by having an out of date version of the VMware
tools installed in Vista. Try installing them again via the Virtual
Machine menu.
One of the features supported by the tools is arbitrary resizing of the
VM window and telling the guest OS the new screen size. If they weren't
functioning correctly, default behaviour of picking one of the standard
VGA/SVGA/XGA/... sizes may be used instead.
If the correct version of the tools is installed, it is probably a bug
and you should check with the VMware forums or file a bug report with
them.
(I'm still running 2.x, and my guest OS is XP, so I can't do a direct
comparison.)

Thanks - did that and it's a known issue. Solution is to switch to
single display then back to full display.
