I am currently in Mangalore,Karnataka. So that puts me in VISA
consulate centre in Chennai. I do not want to go to Chennai because I
have completed my engineering and schooling from Mumbai and I it's
easier for me to come to Mumbai. Also, my parent's are currently
staying in Gujarat. I do not have any current residence proof (saying
Saurabh Gupta lives in either Maharastra or Gujarat). So what do I
do ?? Is my Father's residence proof enough for them to consider my
case for VISA application in Mumbai Consulate. Please help.

Hey Saurabh this is the reply that I got from VFS mumbai for my similar query, hope this helps:

Dear Sir / Madam,
Thank you for your email

If you are resident in India, you are required to appear for an interview at the visa section having jurisdiction over the territory where you have been residing since the past 6 months or more.

Although if you are studying at the zone where you are residing for the past six months and your financial documents to be carried at the time of interview would be from a different zone, then it is advisable to apply from the zone where your financial documents are going to be from.

But incase you are working at the zone where you are residing for the past six months then you can apply from either of the zone .i.e. the zone where you are working for the past six months or more, provided you would be able to prove the residence in that zone at the time of interview OR from the zone where your financial documents are going to be from, which are to carried at the time of interview.

Regards,
VFS Team
