Why so many UDP ports

Hello,

I'm trying to set up a turn server.  I can use TCP/443 to listen, but I do have a question of why the UDP port range is too wide?  Will the turn server provision one UDP port per connection?  Are they also inbound traffic?

I would like to repeat question.
I would like to setup coturn in LXC container, and to date we used Linux Virtual Server to map external IP/PORT pairs to LXCIP/PORT but seems under LVS it's not possible to map port ranges :(
