How can we convince a bank that CompanyWE will not be listening in on conversations (audio and video) between a bank agent and a bank customer?

While using Turnserver i got  this question from a Bank.

Q. How can we (community Turn server, WebRTC) convince a bank that CompanyWE/ME will not be listening in on conversations (audio and video) between a bank agent and a bank customer?

But how do i prove that our setup is not keeping data of their conversations?
Or Turnserver is keeping data? is there any specs which i can show and prove that by default we are not.

1) The TURN server is not keeping any data.
2) They can inspect the server implementation.
3) The voice/media data is, anyway, end-to-end encrypted and the TURN server does not have the key to decrypt it.
