Tunnelblick (and VPNs in general) are different from proxies such as JAP / JonDo.
Here is my understanding of the difference between a VPN and a proxy (but I am not an expert on proxies, so this may not be 100% correct):
- Tunnelblick can be used to set up a VPN that tunnels all traffic between your computer and the Internet through a VPN server. All traffic from any program on your computer is encrypted to the VPN server, which then sends the traffic as if it were from the VPN server instead of your computer.
- A proxy such as JAP / JonDo can act in a similar fashion, except that only specified programs (such as a browser) that have been specifically configured to use the proxy will have their traffic routed though the proxy. Other traffic will still go though the regular routing.
Tunnelblick itself is only software, however. You must connect to a VPN server to use Tunnelblick -- see
Getting VPN Service. The particular VPN server that you connect to may or may not log your activity -- that is a function of the server itself and the organization or individual that operates it. Tunnelblick does keep logs, but they usually only indicate the connecting/disconnecting process, and do not include information about the contents of traffic that goes through the VPN. (It is possible to set the logging level very high, which could disclose some of the contents, but that would be very unusual. The "verb" option in the OpenVPN configuration file defaults to 3, which does not disclose any traffic contents; higher numerical settings may.)
