My favorite fresh salad featuring healthy greens, sliced apple, toasted pepitas, dried cranberries and crumbled goat cheese. Toss with my simple apple cider vinaigrette (recipe below) or use balsamic dressing in a pinch. Recipe yields 2 full-sized salads or 4 to 6 side salads.

An update: BTW, this is my favorite salad dressing now too! It goes with everything, and I always have it on hand. Finding this dressing recipe was the final push to completely eliminating store bought dressing from my house! I searched for a green salad recipe and this comes among others. I am intrigued with the ingredients so I tried it for an event, I have to replace the goat cheese to feta cheese and still they loved it!
Absolutely delicious. I substituted the pepitas for walnuts though. And instead of goat cheese I used gouda. Plus added some thin sliced red onion. And used Paneras Fuji Apple dressing. 5 stars! Could eat this everyday
I have an easy weeknight salad for you all today! This apple walnut salad is the perfect combo of sweet and savory. Made with crisp fall apples and the most delicious tangy balsamic vinaigrette.
In a small bowl, whisk together the apple cider vinegar, maple syrup, garlic, mustard, salt, and pepper. Drizzle in the olive oil while whisking, and continue to stir until the dressing is emulsified. Alternatively, combine everything in a Mason jar with a tight-fitting lid, and shake to combine. Season to taste, and enjoy!
Toss this apple cider vinaigrette with any salad you please! I especially love it with fall flavors. I call for it specifically in my Wheat Berry Salad, and it would be fantastic on my Farmhouse Farro Salad, Pomegranate Salad, and Butternut Squash Salad too.

If you were to ask me what is the number one thing I learned about creating recipes, my answer would be that in order for your recipes to taste amazing, you need to balance four things: Salt, acid, fat, and sugar. This apple salad recipe is the epitome of this concept.
Think about it for a second. Almost every dish starts with (sweet) onions, sauted in (fatty) oil, and then later enhanced with some sort of an acidic ingredient like tomatoes, vinegar, citrus, or cultured dairy like yogurt or sour cream. Then finally, seasoned with salt and pepper.

If you have never tried Autumn Glory apples, they taste like apples flavored with cinnamon with undertones of caramel. I know it might be hard to imagine, but believe me they are that good.
Second sweet component of the recipe is raisins. It is no secret that apples and raisins are a match made in heaven. But together in this recipe, they helped me round up the earthy flavors of the baby spinach and walnuts.
Now, I know that most people are accustomed to making apple salad with mayo. While I know how delicious that version tastes, I wanted to make it somewhat healthier so I swapped some of the mayo with yogurt.
The fat content that came from 2 tablespoons of mayonnaise mixed in with cup of Greek yogurt eliminated the need to add in any oil into the recipe. And a generous squeeze of lemon seasoned with salt and pepper gave me the easiest yet the most delicious apple salad dressing.
Prefer an apple salad without mayo?
No problem. Simply follow the exact apple salad dressing recipe below, but swap mayo with 2 tablespoons of olive oil. Give it a taste. If it is not as flavorful as you want, you can add in a clove of minced garlic as well.
Whatever you do, do yourself a favor and ditch the store-bought salad dressings because as you can see below you could easily create a delicious yogurt-based vinaigrette recipe in no time.
Initially, I had no intention of adding any type of cheese into this apple salad recipe. However, even with the addition of yogurt (fat + acid), mayonnaise (fat), lemon juice (acid), and a generous amount of salt and pepper, once the sliced apples were mixed in with the rest of the ingredients (spinach, celery, red onion, apples, raisins, and walnuts), it was just not complete.

They are pomegranate seeds. I added them to give it some color and sweetness. I mentioned it in the article, but I will add it in the recipe as well.
It was mainly added for decorative purposes (the salad looked so blend without the pop of red coming from the pomegranate), but you can omit them or use other sweet fresh or dried fruit if you want. Dried cranberries would also be a nice addition.

I made this salad for company in order to offer them something different than my usual tossed green salad. Everyone loved it. Gave the leftover salad to my son, and he said it was better than what he gets in a restaurant. I candied the walnuts and added more goat cheese, but, otherwise, followed the recipe as written. A salad to impress company, and so easy to prepare. Will definitely make it again.

There are lots of ways to mix the ingredients together for healthy salad dressings. While I recommend blending with a mini prep, immersion blender or blender, you can whisk this apple cider vinegar vinaigrette by hand too! A whisk in a bowl or shaking the dressing ingredients together in a jar are very simple ways of creating an emulsion too!
I favor using a blender or mini prep for dressing because it chops the shallot more finely and it makes their flavor more pronounced. A simple rule of thumb is that machine-blended dressings stay in emulsion longer in the fridge. This is great if you like to have the dressing on hand for several salads.
