The sun is finally out, temperatures are rising, and so is my appetite. Lucky all the best restaurants in Orange County are unveiling their new summer menus. To begin we joined Chef Diego Velasco and his culinary team at Memphis Cafe in Costa Mesa. Diners can expect new and innovative twists to classic southern favorites.
For our first course, we enjoyed their new Fried Washington Oysters with red beans and rice, smoked pork belly, and zucchini mignonette. The oysters were perfectly crisp and crunchy with cornmeal breading perfectly complimenting Memphis Cafes southern charm.
Everything was so amazing and I thoroughly enjoyed sitting down with Chef Diego to learn more about his background and culinary influence. While growing up Chef Diego actually spent time living with a Southern Rock Band who introduced him to the art of southern cuisine. Believe it or not, Chef Diego actually went to school for finance, but soon realized it was not for him. Little did he know his days living with a Southern Rock Band would inspire him to change paths and go to Culinary school, eventually leading to the amazing restaurant we all get to enjoy today, Memphis Cafe in Costa Mesa!
The southern anchorage, off the town of Tambor, has numerous lanchas med-moored to the old cement dock at the end of the pier and a few speed boats tethered to moorings. The water has a dingy color to it, but town is accessible.
Ciudad Cortes is the main center for institutional services in the region. There are many options for education in Cortes, for instance. Elementary schools are plentiful and the high school, Liceo Pacifico Sur, serves the entire district of Cortes. Buses travel all over to pick up students and to take them to their daily classes. Most recently, a post-secondary vocational school campus from INA (National Institute of Learning) has opened in the heart of Nuevo Cortes that can certify applicants to work in a variety of fields. As it stands, Puerto Cortes has the highest social development in the southern part of the country.
So we took it upon ourselves to pull together our Costa Meno list\u2014it means \u201Ccosts less\u201D in Italian, and costa also of course means \u201Ccoast\u201D (in Spanish too for that matter), but it\u2019s also our attempt at wordplay to avoid the A, B and C words (affordable, budget and cheap). We\u2019re starting first with Italy, but don\u2019t worry\u2014we\u2019ll revisit the project again with other countries! And because it\u2019s summer, we\u2019re just listing places that are on or near the water, since we figure that\u2019s what most of you are after. Our methodology: we priced out a double room during the peak week of July 17-20 (we didn\u2019t do a weekend knowing rates increase), and only included places that are under 300 euros a night (with a couple that push a bit above that, because they looked amazing). Nearly all are small hotels, but we threw in a couple of rentals we came across because, same. We didn\u2019t ask our friends for recommendations\u2014we know it\u2019s too much to get them to spill their favorite small guest houses publicly\u2014so these are places we have either been to, or already knew about via friends, or just through a ton of research. If you try any of them out this summer, or want to share your favorites, we\u2019d love to hear! And, as always, we\u2019ll keep adding to this list as we make new discoveries.
After some basic instruction the Gamma Niners went to work, pounding four-foot lengths of rebar into the ground, sliding net poles over the rebar, and unfurling several nets in newly established net lanes the northern section of AV5. This plot (AV5N, above) was hillier than the level southern section--now called AV5S--in which previous groups had worked. AV5N was in full sun and had no "edge" but contained a good many aloe blooms. We could also see several Ruby-throated Hummingbirds, Archilochus colubris, taking nectar throughout the plot and we were betting we could catch a few.
