I'm looking for help with a recipe if you'd like to help please read on otherwise sorry to bother you.
My attempts this year to do a pepper beer this year from ingredients from my garden were spoiled with the hail storm last month. I've instead decided to attempt a clone of Left Hand's Fade To Black Volume 3 which as you may remember was a "Rocky Mountain Black Ale" with peppers. I loved this beer and I was very sad when it went away. I've been doing some homework and I have ordered the same peppers from the same source as left hand. Their process was well documented in a video they posted in 2012, so I feel I have the pepper piece down. My problem is the beer recipe which is a little more hazy. Left hand has the ingredients posted here...
But of course no real recipe is listed. I was able to find a clone recipe that I did not totally agree with here...
I wanted to get some thoughts on what I have put together. I would appreciate any and all feedback, I really want to get this beer right the first time.
8.5 lbs 2 Row
3 lbs Smoked Malt
1.5 lbs Munich
1.25 lbs Chocolate
1 lbs Crystal 40L
.5 lbs Caraaroma
.5oz Chinook 60 Minute
1oz Mt. Hood 15 Minutes
Wyeast #1084 Irish Ale
OG ~1.077 FG ~1.021 ABV ~7.42% IBU=26 SRM=36
It's quite possible I will not be able to find Caraaroma and may instead sub some combination of crystal 120, special b, and aromatic malt.
