Metro-North publishes a web page at http://as0.mta.info/mnr/html/bigboard.cfm
that shows times, destinations and track assignments of upcoming
departures from Grand Central Terminal. This has been transformed into
a great desktop widget available here:
http://widgets.yahoo.com/widgets/mnr-grand-central-terminal-departures

Is it possible, using data available in Google Transit's pop-up
windows, to create similar widgets for other Metro-North stations
(without the track assignments)? I'd love a desktop widget that shows
upcoming scheduled departure times and destinations for my local
station.

This would be a great Google Transit Widget - the ability to set your routes and/or stops and then have it customized to show the next arrival and departure.  Something similar to NextBus!

I have published iGoogle widgets with similar functionality for 12
different transit agencies ( http://bit.ly/FAfCz ) using the API that
I announced a while ago (http://developer.thenexttrain.com/) but until
I have gtfs data for metro north, I can't do the same for them. If
anyone has an access to an official or unoffical gtfs file for metro
north pass it along and I'll get a widget up almost instantly.

(only 9 of those widgets show in the iGoogle directory, you can find
links to the rest via http://thenexttrain.com/ at the bottom of any
schedule)

You should also be able to use my json api to write a matching
yahoo/apple dashboard widget.
