Baked Ricotta with roast veggies
Ingredients
500g packet of ricotta
4 tbsp olive oil
2 tbsp mixed herbs
1 tsp hing
2 tsp salt
2 tsp pepper
mixed veggies to roast
Directions
Line 2 baking trays with baking paper.
Cut veggies, put on a baking tray, add 2 tbsp olive oil, 1 tsp salt, 1 tsp pepper.
In a bowl mix ricotta, remaining olive oil, herbs, hing, 1 tsp salt and 1 tsp pepper.
Spread the ricotta on the baking tray.
Bake the ricotta at 180 degrees for about 30 mins and the veggies until they are soft.
