smashed chickpea sandwich
Ingredients
2 cups of chickpeas
1 celery stick
1 carrots
2 tbsp vegan mayonnaise
1 tsp dijon mustard
1/4 tsp hing
2 tbsp pepitas
lettuce
a squeeze of lemon
Directions
Mix together chickpeas, mayo, mustard, hing and lemon
Use a fork to mash the chickpeas
Add veggies and pepitas
Add mixture to bread or wraps
Add lettuce
Enjoy!
