Hot Saffron Milk with Pistachios
Makes enough for 4 persons
Ingredients
12 saffron threads
4 cups milk
1 tbsp powdered raw pistachio nuts
3 tbsp sugar or honey
Directions
1. Grind with saffron threads to a powder with a mortar and pestle, alternatively, powder them in a coffee grinder.
2. Boil the milk, saffron, and most of the pistachio powder in a heavy-based saucepan over moderate heat. Stirring constantly, bring the milk to full boil, allow it to froth twice, then remove from heat. Dissolve the sweetener in the milk.
Garnish each serving with the remaining pistachio nut powder.
