Easy Ekadashi Spinach And Cheese Pie

Ingredients

Base

3 cups of almond meal

1/4 cup ghee

pinch of salt

 

Filing

500 gms ricotta

250 gms fetta

300 gms spinach, any type

bunch basil

pepper

150 gms cheese for topping

 

Directions

Preheat oven to 180

Melt ghee over a low heat, mix with almond meal and salt. Place mixture into a tart tin, distribute evenly. Bake for 15 mins until brown.

In a mixing bowl add ricotta, feta, chopped spinach and basil and pepper.

Add to base, cover with foil, cook for 35-40 minutes until mixture is firm. Take foil off, add cheese, cook for a further 10 minutes till the cheese has browned.
