Scrambled Tofu...!!!

Ingredients

  • 1 red capsicum, diced

  • 1 cup diced vegetables of choice, such a, zucchini, tomatoes, carrot

    or spinach

  • 1 tsp hing

  • 500g firm tofu

  • 1 tsp curry powder

  • 1/2 tsp ground turmeric

  • 1 tsp salt, and pinch of black pepper if desired

  • 1 tsp cumin seeds

  • 1 tbsp ghee or butter

  • Option of a handful of grated cheese

Directions

  • Press tofu in between some paper towel to remove excess moisture

  • Heat frypan, add ghee or butter

  • Add cumin seeds till fragrant

  • Add hing, stir for 30 seconsds

  • Sauté the vegetables over medium heat until lightly browned.

  • Break up tofu and add to pan then add it to the pan.

  • Add the spices and salt.

  • Continue to cook—stirring occasionally—until the tofu is hot and extra liquid has evaporated so .

  • Stir in the spinach until it wilts,

  • Add cheese then serve with toast, sliced avocado, salsa or a sprinkle of black pepper
