Not able to use assign issue as that only allows me to change the assignee from the developer to someone else. (Not my intended action to change the assignee but the tester which is in a separate field instead)
I am not sure why you are trying to use advanced field settings to set the assignee. You can easily select the assignee as a field from the list with default options and set the field the desired option. Your rule could be set up like this:
Verify if your tester has proper access to your project. He/she can't be assigned without access to the project. And if you don't see the person in the list, type his/her name to start a search in the list. It is possible that he/she pops up then.

For some reason every invite I get sent to my email now is causing the developers issues. Until this past week I never had any problems getting testflight invites now when a developer uses my email they immediately get a flag saying "1 tester has an invalid name or email address and wasn't added"
In my case the user removed himself from TestFlight, and now we can't add him back. I got the same error "invalid email or name". Apple is sure nice on the user side. For the development side, things are a nightmare lacking support
Same issue over here. developer AT example.com got kicked. I changed the Apple-ID to jan.developer AT example.com and then it was accepted. Gmail users can add dots anywhere in the own name, so they should be able to do the same. But users at other domains might not have the same flexibility.

I set up a build and add two Internal Testers. Immediately after pressing the "Invite" button I noticed that the checkbox next to my email address was the only one that remained checked. I thought nothing of it, figuring it would become checked when he actually installed and tested the app. But he says he never received an invite. Does anyone know if I'm doing anything wrong?
Check your External Testers list.
You can't have same email/tester exists in both Internal and External testers at the same time.
And, sometimes it does take a while to receive tester emails from Apple.
(*) after turning on internal testing, and/or adding an internal tester, it does take some time for that person to get the crazy "CompanyName has invited you to test AppName" email --- maybe an hour. This is ridiculous, but that seems to be how it is
(*) indeed note that there is a ridiculous "CompanyName has invited you to test AppName" email. Again this is for INTERNAL testing. you'd think that after you click internal testing, the app would of course just pop-up inside TestFlight. But no. nothing happens until the person (often yourself!) gets that email and confirms in the email
I also think there is an issue where it will not allow you to add them if they don't have a valid device for the build (i.e. an iPad app and they only have an iPhone). It appears to be trying to be "helpful" by not showing you invalid devices and instead is just confusing.
