Set up your grill for indirect grilling and heat to medium-low. Brush or scrape the grill grate clean and oil it well. Add half the wood chunks or chips to the coals. Arrange the ribs on the grate, bone side down, away from the heat, and lower the lid. Smoke-roast the ribs until sizzling, browned and tender. When ready, the meat will shrink back from the ends of the bones by about 1/2 inch and the ribs will be tender enough to pull apart with your fingers. Replenish the wood and charcoal as needed. Total cooking time will be 3 to 3 1/2 hours. The last 30 minutes of cooking, baste the ribs with the glaze. Baste twice more before serving. Pour any remaining glaze over the ribs and serve.
Our favourite is the ribs and a half a metre is perfect for the two of us. We have seen people sit down and have a metre each! The inner plating retracts upwards, exposing a total of four sets of "ribs", at the start of Route Kanal, where the reconfiguration has fully completed. During this transformation a loud alarm resonates, echoing for several seconds each time it sounds, possibly emanating from the Citadel itself. A small piece of plating barely visible on the left (southern) side of the Citadel also descends partly down the tower, scanners rapidly deploy from around that area on the tower, and the Citadel remains in this configuration for the remainder of the game. The Citadel can also be seen from the rear near the first gate and Water Hazard, showing a dull pair of metal strips separated by one vertical white beam. When Freeman sabotages the reactor, the plating descends to the "all clear" state and covers the ribs. The lower set of ribs descends along the tower and locks in place behind the lowest panel on the right-hand side of the structure.
