1) Is there a fast way to hide/show all the labels for the graphs on
the handheld at one time? (they clutter the screen)

2) Is there a setting to not have them appear in the first place?

3) There seems to be a difference between Hide (I can see them lightly
after Actions/3) and Delete (where I can't get them back under Actions/
3)

4) Students often have 20 different piecewise graphs for their Calc
Art.
So should they just Hide the labels as they go? (tedious)

5) In os1.7 I don't remember the clutter and prior to that there was
clutter, right? So there has to be some cool trick now!

6) Menu/View A Show Object Selection Guides surely is helpful for
something, but I haven't been able to figure it out...

With 2.0, the function graph labels appear by default. To turn this off for a document, just go to Settings > Document Settings > Graphs & Geometry and tick the box for "Automatically hide plot labels".

When you HIDE something, it is still there, but hidden. Choose Hide/Show from the menu and you will see the things that have been hidden (lightly) and so click on them to get them back again.

When you DELETE something, it is gone. No getting back (unless you UNDO - and this will still not work for defined variables: if you delete a defined variable and UNDO you will have to redefine it).

The menu item to Hide Object Selection Guides gets rid of those annoying pop-ups when you go to grab things, hence reducing screen clutter.
