Although it is mainly beef or chicken soup, still, different cities in Indonesia have their own recipes for delicious soto. Sometimes, the name of the dish is usually based on the name of the city where the dish came from, for example, Soto Betawi, Soto Banjar, Soto Kediri, Soto Surabaya, Soto Mahakam, etc. Those are the name of the cities in Indonesia. Other times, we name this dish based on the main ingredient such as Soto Ayam (chicken soto), Soto Daging (beef soto), Soto Mie (soto with noodle), etc.

This recipe also uses shrimp paste which at first I thought would make the dish taste quite strange, but I changed my mind immediately after I tasted it. It was so delicious and fresh. One other thing, it also uses coconut milk to make the soup thicker and creamier than our usual chicken soto. To make it taste lighter (or for lower calories), you can skip the coconut milk as it was already very delicious even without the coconut milk.

To make the chicken stock, heat the vegetable oil in large stock pot over high heat. Season the chicken fillets with salt and sear in the pot for 2-3 minutes each side. Add the remaining stock ingredients and 8 cups of water. Bring to a simmer, then reduce the heat to medium and cook for 45 minutes, skimming the surface every so often.

To finish the broth, heat 1 tablespoon of vegetable oil in a large pot over medium-high heat. Add the spice paste (keep the rest for another time in the freezer) and cook stirring for about a minute or until fragrant. Stir through the coconut milk and simmer for another 2 minutes. Then stir through the chicken broth and simmer for another 2 minutes. Then add the lime juice and season with salt to taste.

Soak the vermicelli noodles in hot water for 3-4 minutes or until tender. Drain and divide among serving bowls. Top with shredded chicken. Then ladle over the soup. Top with sambal oelek, coriander leaves and a lime wedge.

Mee soto and soto ayam are both popular Indonesian noodle soup dishes that are essentially the same thing. The only difference is the type of noodle that is used in the dish. Soto ayam is made using rice noodles or Ketupat (boiled compressed rice cakes) whilst mee soto had yellow egg noodles, typically hokkien noodles added to the dish.

Soto ayam is a delicious, comforting and spicy chicken noodle soup that is chock full of turmeric, lemongrass, coriander and ginger. It is super hearty, super tasty, and the perfect chicken noodle soup if you find yourself coming down with something during the colder months!

Soto is a culinary category within Indonesia, it includes soupy dishes that are generally made from meat or vegetable broth. The dish also generally contains some sort of shredded meat like chicken, vermicelli noodles and soto is usually served with rice or with rice cakes!

So good & comforting ??? I added 1 can of coconut cream instead of coconut milk to make it creamier and I also sauteed some shallots in oil to put some crunchy shallots on top. ?????????

I love noodles. And I have a thing for noodle soups. Look around glebe kitchen. Ramen. Pho. Laksa. Classic chicken noodle. Turkey noodle from scratch. Bo kho. Khao soi. Noodle soup puts me in a happy place. And soto ayam is right up there.

In the end I used my VPN. Set it to Indonesia. So I could get to google Indonesia. Watched a bunch of Indonesian youtube videos. A lot of google translate. Learned some new words. And came up with this.

Really positively surprised how good this recipe was. I'm trying to go vegan again and this was a really good start. It also taste good with rice. Exited to try out the other ones that I have been saving these couple of days. Thank you! ?

I currently have corona and was wanting something comforting but easy to make. The result was so good, warming and filling. The only problem I had was the initial blending. I started with my blender which I got as a recommendation from your website but it was still too big so then I tried it in a nutribullet which also didn't work. I added water and did it that way and cooked the mixture on a high heat until the water evaporated. Do you have any tips which would mean I wouldn't have to add water? I know it mentions a small blender, hence the 2nd attempt in the nutribullet. I did also keep stopping to scrap down the sides.

Hey Phillipa, thanks for taking the time to share your experience with the Soto Ayam! Tofu is a lovely idea to modify this one. For blending the spices, we actually recommend a food processor rather than blender. Food processors are better suited for blending semi-solid ingredients, like in this recipe, compared to blenders which are usually designed for liquids. If you'd rather not add water, you could add a touch more oil if the mixture won't blend ?

I absolutely loved it. So delicious and full of flavors. Thank you both very much for this wonderful app. I thought you might have a cook book available at some point but this is so much better. I tried a lot of recipes already and I aim to try more. It was a great investment into my health.

I made this after watching the video where Robin makes it for Sadia for the first time. Immediately ran to the nearby market for ingredients. The hubby and I were obsessed with the bright, freshness of the ginger. Coworkers were jealous at work when I heated up my leftovers because the break room smelled divine!

There's recipes that surprise you, and then there's recipes you look at once and you know they're going to be fabulous. This was one of the latter kind for me. I saved it for a rainy Saturday when I needed some cheering up, and the recipe turned out exactly as I had imagined - great! :-)

I wasn't convinced I'd like this as I'm not a huge potato fan but wow it was so delicious! The coconut milk makes the flavours quite subtle but it still had so much depth with the spices. The whole family really enjoyed. Added some spinach which worked really well.
We ended up with a bit too much liquid so was able to many an extra meal from it the next day by adding more veggies, protien pieces, and some sweet potato as we were out of regular potato and it was still lovely.

This is a new favorite! My brother suggested that I cook it immediately after he saw Robin making it in your "what I eat in a day".
This soup is delicious, creamy, flavourful and so satisfying!

Just finished eating this. My husband and I loved it. Freaking Delicious! I reduced the recipe to two servings. I used soy curl for the mock chicken. I also added 1 carrot, a small zucchini, green beans, and cabbage because why not? I cut the oil in half. It was so good. Next time I will reduce the coconut milk and add more bouillon.

So it ws very good (surprisingly not too spicy, i made for 3 portions, just for me for few days ), and although added entire onion and a bit more ginger and curcuma i guess and de-seeded red chilli pepper ), just not enough flavour, i found, and a bit lacking vegetables. So after i preboiled entire not washed potatoes for 7? mins to cut down time, and cooked all about 5 minutes, i added the leftover (about 1/3) tomato tin and entire tomato and 2 carrots just at the end.
Also used real chicken breast *dont kill me ! ); if i need to explain - im about 75% vegan and this one was organic and from Too Good to Go app - i didn't choose with my wallet to kill it. Just thrown for last 10 min cooking and was good.
if anyone would feel inspired by modifications ;p
Didn't have sprouts cilantro onion, so garnished with radish and alfalfa and cresson ;)

I've had this dish in several different places in Indonesia so far - several different parts of Bali and in Yogyakarta (on the island of Java). All of them have been pretty similar and I think this is pretty close to what I made most recently, although after some internet research, it seems that in other parts of Indonesia it would not be uncommon to add coconut milk.
