How/where do I edit Categories?

I can't believe it. I've lost where to find Categories to edit them. I
don't see them in the Control Panel or Prefs. Where'd they go? Haven't
edited them in a long time :)

On the Control Panel, they're called Jobs (which is short for Projects, Categories, Clients, and Tasks).

I was on the Jobs tab but didn't realize to access Categories (and the
others) you had to simply use the pulldown menu. Duh :)

Question: If I change the wording of an existing Category, will the
change permeate all previous records, or only new ones?
