Just was gifted an old sage gfl 7'6" 5wt.  Cool old rod, but it seems to be a little less burly than most modern 5wts. Just wanted to get some takes on line weights, stick with the traditional 5wt, or maybe go down a step?
any advice would be greatly appreciated.

The GFL is also known as the RPL and was a pretty popular Sage rod. It isn't flimsy, per se, just a mid/medium action rod. A regular 5wt line should be fine, but just remember the action on a mid/medium rod will be slower than your typical tip-flex rods.

You could try a line with a long, gentle front taper like a rio trout LT or triangle taper or something.  I have a very moderate 6-weight and it feels overloaded on longer casts with some of the typical WF lines.  That's just me though -- everyone likes something a little different. Some lines are 1/2 heavy, so a 5-weight of one of those might make you happy.

I'd bring it to one of the local shops and see what they recommend --

I'm a little late on this, but I would go with a DT5 or WF5 and embrace the flex.  Especially for a 7'6"  which is a great trout rod around here.  I fish much slower rods and enjoy them.

However, your best bet is to find a few lines and cast it to see what  works best for you.
