If you are thinking of fishing smoky mountain national park (which is close) I would not bother with a guide. It is pretty easy fishing and there are a number of guidebooks on the park. If you have ever fished shenandoah it is similar fishing altough many of the streams have more browns and rainbows than brook trout.
If you are interested in the park I can give you some streams to try. I went to grad school in NC and spent a good bit of time there. Beautiful place. Haven't fished the tailwaters but my brother has fished the holston and said it was excellent.
